Since many Catholics abstain from eggs during Lent, the Mona de Pascua represents the triumph of abstinence because all of the leftover eggs were kept for the savory, delectable cake. However, to make the cake more of a sweet delicacy, some Spanish bakers now incorporate chocolate eggs.
