One of the biggest species of tuna is the bluefin, which may reach weights of 500 pounds or more. Their use in sushi contributes to their endangerment, which makes them vulnerable. There is a finite amount of bluefin in the ocean, and as demand rises and availability falls, the price of these fish has increased.

In Japan, there are even auctions for tuna. Kiyoshi Kimura, the owner of a restaurant company, spent $3.1 million in January 2021 for a 613-pound bluefin tuna that had been captured off the coast of the prefecture of Aomori. This was almost twice as much as Kimura had paid at auction six years prior for a comparable tuna. In Japan, tuna auctions are, to put it mildly, very profitable.
