The storage environment affects the shelf life of potatoes. When stored in the pantry, potatoes last for three to five weeks. But if you keep them in the fridge, you can buy yourself a little extra time—they last for three to four months. A number of factors affect how long potatoes will last on the shelf, such as the type of potato, cooking technique, sell-by date, and humidity level in your area.

Crucially, it’s simple to determine whether a potato has become bad. Throw it away if it gets mushy or squishy. Throw away the potatoes if they smell musty or have internal flaws.
