What it is: the sea urchin’s edible reproductive glands
Average Cost: $120 to $500 per kilogram If you’re a seasoned seafood enthusiast looking to branch out, Uni is a good place to go. Japan is the source of uni, a delicacy enjoyed all around the world. A bit of an unusual dish is uni. It is occasionally referred to as “sea urchin roe” or “sea urchin’s eggs.” It is manufactured from the edible portion and reproductive glands of the well-known sea urchin.

Fulton Fish Market describes Uni as “savory,” with a pronounced “umami” and “briny” flavor. “Buttery” and “melt-in-the-mouth” describe the texture. While some Uni have metallic notes, others have pleasant ones. These vivid orange-yellow lobes are frequently eaten with sushi or pasta.
