8. Dragon Fruit (White Flesh Variety)

The unusual white-fleshed dragon fruit has amazing texture and subdued sweetness. Unlike its more widespread red-fleshed cousin, the white species creates almost translucent preserves dotted with little black seeds. To preserve the delicate taste character of the fruit and have the ideal set, the jam-making process needs to be under close control. Particularly fit for gourmet uses, the final preserve has faint floral undertone and aromas of kiwi and pear.
