3. Black Sapote (Chocolate Pudding Fruit)

Rare tropical fruit Black Sapote, sometimes known as the chocolate pudding fruit, produces a very unusual jam. Originally from Mexico and Central America, this fruit from the persimmon family gets a strong dark brown flesh when fully ripe. The inherent chocolate-like taste of the fruit gets stronger during the jam-making process, producing a preserve that tastes very like chocolate spread but without any real chocolate. The fruit must be exactly ripe to attain the right consistency, hence the jam-making procedure calls for precise timing. The resultant preserve has deep dark color and a thick, velvety texture; inherent sweetness calls for little additional sugar. Unique qualities of the jam make it a great spread for handcrafted bread and a filling for pastries.
