Its reputation solidifies Tokyo’s status as the city with the most renowned and costly dining establishments. The restaurant seats only 22 guests and is tucked away at the end of a long hallway in the basement of an office building. It is best known for serving the finest heirloom Tajima beef, sourced exclusively from pure-bred cattle raised under specific conditions. The chefs season the meat with just salt and pepper, skewer it, and grill it in a kiln using Kishu Binchotan charcoal. Other notable dishes include a 5 kg whole smoked salmon, which requires a week to prepare. The restaurant also offers over 200 wine selections, primarily from the Burgundy and Bordeaux regions of France, to pair with the meals. The average cost per person is approximately $550.
