This two-Michelin-star underwater restaurant combines art and hospitality to create a unique dining experience. Described as an “imaginative, high-end Mediterranean dining concept with VR technology and immersive film projections,” Sublimotion opened in 2014 after the concept was developed in 2012. One reviewer called it a “mind-blowing experience,” describing it as “dining at its most surreal, futuristic, and thought-provoking.” The restaurant hosts 12 guests in a high-tech “capsule,” where the walls display ever-changing visuals. The 3-hour banquet takes diners on a journey through different times, places, and emotions, from the ocean floor to a 20th-century cabaret to a futuristic dinner set in 2050. It is a popular destination for the world’s elite visiting Ibiza for its nightlife and beaches. The restaurant features some of the best chefs globally, including chef-owner Paco Roncero, known for creating innovative dishes. Guests enjoy a 20-course Spanish tasting menu, with the experience costing approximately $1,600 per person, making it one of the most exclusive dining destinations in the world.
